- 3 medium extra ripe bananas (mashed)
- 1 cup white granulated sugar
- 1/3 cup canola oil
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1 1/3 cups all-purpose flour (sifted)
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×5 loaf pan by spraying it with nonstick spray and lining the bottom with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth. Add the sugar and mix until combined.
- Stir in the eggs, canola oil, and vanilla extract. Mix until well blended.
- In a separate bowl, sift together the flour, baking soda, and salt. Gradually fold this mixture into the banana mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a twist, consider using melted coconut oil instead of canola oil or brown sugar instead of white sugar.
