A comforting and moist banana bread made the old-fashioned way, perfect for any occasion.
Ingredients

- 3 medium extra ripe bananas (mashed)
- 1 cup granulated sugar
- 1/3 cup canola oil
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 1 1/3 cups all-purpose flour (sifted)
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9X5 loaf pan with nonstick spray and parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Incorporate the sugar into the mashed bananas, mixing well, before adding the eggs, vanilla extract, and canola oil.
- Sift together the flour, baking soda, and salt in another bowl. Gradually fold this dry mixture into the wet ingredients until just combined—be careful not to overmix!
- Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean when inserted in the center.
- Allow the loaf to cool completely in the pan before slicing.
Notes
Store at room temperature wrapped in plastic wrap or an airtight container for 3-4 days. For longer storage, freeze sliced pieces in a freezer-safe bag.
