Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9X5 loaf pan with nonstick spray and parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Incorporate the sugar into the mashed bananas, mixing well, before adding the eggs, vanilla extract, and canola oil.
  4. Sift together the flour, baking soda, and salt in another bowl. Gradually fold this dry mixture into the wet ingredients until just combined—be careful not to overmix!
  5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean when inserted in the center.
  6. Allow the loaf to cool completely in the pan before slicing.
