- 1 pound gnocchi
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven. Set it to 400°F (200°C).
- Sauté the onions. In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté until caramelized, about 15-20 minutes.
- Add garlic. Once the onions are golden, add minced garlic and cook for another minute.
- Combine liquids. Pour in beef broth and heavy cream. Allow to simmer for 5-10 minutes.
- Toss in the gnocchi. Mix in gnocchi, ensuring they are coated in the broth and onion mixture.
- Transfer to a baking dish. Pour the mixture into a baking dish and top with Gruyère and Parmesan cheese.
- Bake. Place in the oven and bake for 15-20 minutes, until the cheese is golden and bubbly.
- Garnish and serve. Finish with fresh thyme before serving.
