- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tsp dried oregano
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Chop garlic finely and ensure all ingredients are ready for cooking.
- Cook the pasta: Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Drain and set aside.
- Sear the chicken: In a large skillet over medium heat, heat a splash of olive oil. Season chicken breasts with salt and pepper. Cook each side for 5-7 minutes until golden brown. Once cooked, remove the chicken from the skillet and set it aside.
- Sauté garlic: In the same skillet, add minced garlic. Sauté for about one minute until fragrant, being careful not to burn it.
- Make the sauce: Stir in heavy cream and chicken broth. Add the dried oregano and optional red pepper flakes for a subtle kick.
- Combine and simmer: Return the seared chicken to the skillet. Let it simmer for about 10 minutes until cooked through and the sauce has thickened slightly.
- Add pasta: Toss in the drained pasta and mix to coat it well in the sauce.
- Plate and serve: Dish out your scrumptious meal, topping it off with freshly grated Parmesan cheese. Enjoy every bite!
Notes
For a lighter version, substitute heavy cream with half-and-half or whole milk. Serve with a side salad or garlic bread.
