  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the chicken: In a small bowl, combine garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper. Pat dry the chicken breasts and rub half of the spice mix onto both sides.
  2. Cook the chicken: Heat the cooking oil in a large skillet over medium-high heat. Add the seasoned chicken breasts, cooking for 5 to 6 minutes on each side until golden brown.
  3. Cook the pasta: Bring a pot of salted water to boil. Add the penne pasta and cook according to package instructions for al dente. Reserve ¼ cup of the pasta water before draining.
  4. Make the sauce: In the same skillet, melt the butter over medium heat. Add the minced onion and garlic, sautéing for about 1 minute until fragrant. Stir in sun-dried tomatoes and tomato paste, cooking for an additional minute.
  5. Combine the sauce: Pour in the heavy cream and chicken broth, incorporating the remaining spices. Let simmer for 2 to 3 minutes until slightly thickened.
  6. Mix the pasta: Toss the cooked penne into the creamy sauce along with the grated parmesan cheese. Use reserved pasta water if sauce is too thick.
  7. Finish with chicken: Slice the rested chicken and place it on top of the pasta.
  8. Garnish and serve: Top with fresh basil and additional parmesan. Serve immediately.
