- 2 boneless, skinless chicken breasts
- 3/4 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 oz pasta (fettuccine or penne)
- 2 tablespoons olive oil
Instructions
- Begin by cooking the pasta according to package directions; then drain it and set aside.
- In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
- Season both sides of the chicken breasts with salt and pepper, and add them to the skillet. Cook for 6-7 minutes on each side, or until they are cooked through. Once done, remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté until it becomes fragrant—this should take about 30 seconds.
- Toss in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes.
- Pour in the heavy cream, stirring well to combine. Slowly incorporate the grated Parmesan cheese and Italian seasoning, cooking until the sauce thickens slightly.
- Return the chicken to the skillet, spoon the creamy sauce over it, and simmer everything together for about 3-4 minutes.
- Finally, combine the cooked pasta with the creamy chicken sauce in a large bowl and serve warm!
