- 4 large potatoes, diced
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar recommended)
- 1 cup lettuce, shredded
- 1 avocado, sliced
- Sour cream, for serving
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes in olive oil, salt, and pepper. Spread them out on a baking sheet.
- Roast for 25-30 minutes or until the potatoes are crispy on the outside and tender on the inside.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
- Add the taco seasoning with the water specified on the packet. Stir well and let it simmer for about 5 minutes.
- In serving bowls, layer the crispy potatoes, followed by the cooked meat, black beans, corn, diced tomatoes, cheese, and lettuce.
- Top with avocado slices and a dollop of sour cream. Serve immediately and enjoy!
