- 1 lemon (juiced and zested)

- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine olive oil, lemon juice, lemon zest, paprika, garlic powder, salt, and black pepper in a mixing bowl. Whisk until well mixed.
- Coat each chicken thigh generously with the lemon-paprika mixture.
- Place the chicken thighs skin-side up in a baking dish, allowing space between each piece.
- Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the skin is crispy.
- Garnish with fresh parsley before serving.
