Ingredients

- 2 medium zucchini, sliced
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a large frying pan over medium heat.
- Add the sliced zucchini, seasoning with salt and pepper. Sauté until slightly tender, about 5-7 minutes.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer half of the sautéed zucchini slices over the marinara.
- Add dollops of ricotta cheese over the zucchini layer.
- Pour another generous layer of marinara on top, followed by mozzarella and Parmesan.
- Repeat the layering process with the remaining ingredients.
- Bake for 25-30 minutes, or until bubbly and golden on top.
- Allow to cool for a few minutes before serving.
Notes
For a twist, consider adding fresh herbs or swapping zucchini for eggplant if out of season.
