Ingredients

  • 2 medium zucchini, sliced
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a large frying pan over medium heat.
  3. Add the sliced zucchini, seasoning with salt and pepper. Sauté until slightly tender, about 5-7 minutes.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer half of the sautéed zucchini slices over the marinara.
  6. Add dollops of ricotta cheese over the zucchini layer.
  7. Pour another generous layer of marinara on top, followed by mozzarella and Parmesan.
  8. Repeat the layering process with the remaining ingredients.
  9. Bake for 25-30 minutes, or until bubbly and golden on top.
  10. Allow to cool for a few minutes before serving.

Notes

For a twist, consider adding fresh herbs or swapping zucchini for eggplant if out of season.
