These Greek Chicken Tenders are tender, bright, and infused with Mediterranean flavors, making them perfect for quick weeknight dinners.

- 1 cup Plain Greek Yogurt
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Lemon Juice
- 1 tablespoon Lemon Zest
- 3 cloves Garlic (minced)
- 2 teaspoons Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Ground Cumin (optional)
- 1 pound Chicken Tenders
- Fresh Parsley or Dill (for garnish)
Instructions
- Mix the marinade: In a bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, pepper, and cumin (if using).
- Coat the chicken: Add chicken tenders to the bowl and stir until fully coated. Cover and refrigerate. Marinate at least 30 minutes; up to 6 hours for deeper flavor.
- Preheat your pan or grill: Heat a large skillet over medium-high and add a little oil, or preheat a grill to medium-high.
- Cook: Remove excess marinade and cook tenders 3–4 minutes per side until internal temperature reaches 165°F (74°C).
- Rest: Transfer to a plate and rest for 5 minutes to allow juices to redistribute.
- Garnish and serve: Sprinkle chopped parsley or dill and an extra squeeze of lemon.
Notes
For a quick and easy meal prep, combine marinade and chicken in a zip-top bag. Serve over rice or in pita pockets.
