- 1/2 cup buffalo sauce, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- 8 oz shredded mozzarella cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup plain flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying

- Mix the filling: In a large bowl, combine the ground chicken, 1/4 cup of buffalo sauce, garlic powder, onion powder, paprika, salt, and black pepper. Fold in the shredded mozzarella and crumbled bacon until everything is evenly distributed.
- Shape into balls: Scoop about 2 tablespoons of the chicken mixture and roll it into a ball. Place the balls on a plate or a baking sheet lined with parchment paper.
- Prepare the breading station: Set up three shallow dishes—one with flour, one with the beaten eggs, and one with breadcrumbs.
- Coat the bombs: Roll each chicken ball in flour, ensuring it’s fully covered. Then, dip it in the beaten eggs, and finally, coat it thoroughly with breadcrumbs.
- Fry them up: Heat vegetable oil in a deep skillet over medium-high heat. Add the bombs in batches and fry for about 3-4 minutes until they are golden brown all over.
- Drain and cool: Use a slotted spoon to remove the bombs and place them on paper towels to drain off excess oil. Drizzle the remaining buffalo sauce over them for an extra kick.
- Serve immediately: Enjoy your bombs warm while they’re still crispy.
Notes
For a lighter version, consider baking instead of frying. You can also air-fry at 375°F (190°C) for about 15 minutes.
