Description

Crispy, mouthwatering bites filled with spicy ground chicken, stretchy mozzarella, and crispy bacon, perfect for appetizers or game day.

Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup buffalo sauce, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 8 oz shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup plain flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Mix the filling: In a large bowl, combine the ground chicken, 1/4 cup of buffalo sauce, garlic powder, onion powder, paprika, salt, and black pepper. Fold in the shredded mozzarella and crumbled bacon until everything is evenly distributed.
  2. Shape into balls: Scoop about 2 tablespoons of the chicken mixture and roll it into a ball. Place the balls on a plate or a baking sheet lined with parchment paper.
  3. Prepare the breading station: Set up three shallow dishes—one with flour, one with the beaten eggs, and one with breadcrumbs.
  4. Coat the bombs: Roll each chicken ball in flour, ensuring it’s fully covered. Then, dip it in the beaten eggs, and finally, coat it thoroughly with breadcrumbs.
  5. Fry them up: Heat vegetable oil in a deep skillet over medium-high heat. Add the bombs in batches and fry for about 3-4 minutes until they are golden brown all over.
  6. Drain and cool: Use a slotted spoon to remove the bombs and place them on paper towels to drain off excess oil. Drizzle the remaining buffalo sauce over them for an extra kick.
  7. Serve immediately: Enjoy your bombs warm while they’re still crispy.

Notes

For a lighter version, consider baking instead of frying. You can also air-fry at 375°F (190°C) for about 15 minutes.
