- 2 lbs chicken pieces (legs, thighs, or breasts)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup pineapple juice
- 1 tablespoon rice vinegar
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Pineapple slices (for grilling, optional)
- Chopped green onions (for garnish, optional)
Instructions
- Whisk together the soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, minced garlic, ground ginger, and black pepper to create a vibrant marinade.
- Place the chicken pieces into a resealable bag or shallow dish and pour the marinade over the top. Cover and refrigerate for at least 240 minutes, ideally overnight.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and let excess drip off.
- Grill the chicken for approximately 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).
- Add pineapple slices to the grill during the last few minutes of cooking for a caramelized finish.
- Serve the grilled chicken hot, garnished with chopped green onions and grilled pineapple on the side.
Notes
For a spicy kick, add sriracha or crushed red pepper flakes to the marinade. To make it vegetarian, substitute chicken with tofu or portobello mushrooms.
