A delightful twist on the classic grilled cheese, featuring sharp cheddar, crispy beef bacon, tart Granny Smith apples, and a spicy-sweet hot honey drizzle.

- 8 slices artisan bread (sourdough recommended)
- 4 tablespoons unsalted butter, softened
- 8 slices thick-cut beef bacon
- 6 ounces sharp cheddar cheese, grated or thinly sliced
- 1 medium Granny Smith apple, thinly sliced
- 2 tablespoons Hot Honey
- Pinch flaky sea salt (optional)
Optional Hot Honey Ingredients:
- ½ cup honey
- 1–2 tablespoons red pepper flakes
- ½ teaspoon apple cider vinegar (optional)
Instructions
- Prepare Hot Honey: In a small saucepan, combine honey, red pepper flakes, and optional apple cider vinegar. Heat on low for 5-7 minutes, do not boil. Let steep for 15-20 minutes, strain if desired.
- Cook Beef Bacon: Cook bacon until crispy using stovetop or oven method. Drain and break into pieces.
- Prepare Apple and Cheese: Thinly slice the Granny Smith apple and grate the sharp cheddar cheese.
- Assemble Sandwiches: Butter one side of all slices. On 4 unbuttered slices, layer half the cheddar, apple slices, bacon, and drizzle hot honey. Top with remaining cheddar and cover with the buttered slices.
- Grill Sandwiches: Heat a skillet with reserved bacon fat or butter. Cook sandwiches butter-side down for 4-6 minutes per side until golden brown and cheese melts.
- Finish and Serve: Let sandwiches rest then cut in half. Sprinkle with flaky salt or drizzle extra hot honey before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze ungrilled sandwiches for up to 3 months.
