Instructions
- Preheat your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.
- Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
- Beat the softened butter and granulated sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
- Add the eggs one at a time, beating well after each addition. Mix in the honey and vanilla extract.
- Gradually add the dry flour mixture to the butter-sugar mixture, alternating with the milk until just combined.
- Fold in the diced fresh peaches, ensuring they are evenly distributed throughout the batter.
- Spoon the batter into the cupcake liners, filling them about two-thirds full.
- Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool in the tin for a few minutes before transferring to a wire rack.
- Beat the softened cream cheese, sugar, egg yolk, and vanilla extract together until creamy and smooth.
