Description
An easy sheet pan dinner featuring smoky kielbasa, caramelized sweet potatoes, and crisp-tender broccoli, all drizzled with a sticky honey-garlic glaze.
Ingredients
Scale
- 14 ounces smoked sausage (kielbasa), sliced into ½-inch rounds
- 2 large sweet potatoes, peeled and chopped into 1-inch cubes
- 1 large head broccoli, cut into bite-sized florets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry to thicken the sauce)
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil and a pinch of salt and pepper.
- Spread the sweet potatoes in an even layer on the prepared sheet pan.
- Roast the sweet potatoes for 15 minutes.
- While they roast, make the honey-garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Bring to a gentle simmer over medium heat.
- Whisk in the cornstarch slurry and cook for 1–2 minutes until the sauce slightly thickens. Remove from heat.
- After 15 minutes, remove the pan from the oven and add the sliced sausage and broccoli florets.
- Drizzle half the honey-garlic sauce over the pan contents and toss gently to coat.
- Return the pan to the oven and roast for 15–20 more minutes, until sweet potatoes are fork-tender and broccoli is crisp-tender.
- Remove from the oven and drizzle the remaining sauce over the top. Toss one last time and serve immediately.
Notes
For a vegan version, use plant-based sausage and maple syrup. Best enjoyed fresh, but leftovers can be refrigerated for 3–4 days.
