  • 2 large Eggs
  • ¾ cup (165 g) Light brown sugar, packed
  • ¾ cup (150 g) Granulated sugar
  • 1 tablespoon Vanilla extract
  • 1 teaspoon Red gel food coloring
  • ¼ cup Oreo cookie crumbs (about 3 Oreo cookies, blended to fine crumbs)
  • 6 crushed Oreo cookie pieces (6 Oreo cookies crushed into bite-sized pieces)
  • ¾ cup Semisweet chocolate chips, plus more for topping

Instructions

  1. Melt the butter in a medium saucepan or microwave, then let it cool in a stand mixer bowl.
  2. Blend 3 Oreo cookies into fine crumbs and crush 6 for bite-sized pieces.
  3. Sift together flour, cocoa powder, cornstarch, baking soda, and salt in a medium bowl.
  4. Cream the melted butter and both sugars in a stand mixer until creamy (about 2 minutes).
  5. Add eggs one at a time, then mix in vanilla extract and red food coloring.
  6. Gradually mix in the flour mixture until just combined.
  7. Fold in semisweet chocolate chips and Oreo pieces using a rubber spatula.
  8. Chill the dough for at least 3 hours covered with plastic wrap.
  9. Prep cookie balls on wax paper, refrigerate for 10-15 minutes while preheating oven to 350°F (175°C).
  10. Bake cookies for 12-14 minutes until edges are set, then shape and top with chocolate chips.
  11. Cool on a baking sheet for 5 minutes before transferring to a cooling rack.
