- 1/4 tsp white pepper (optional)
- Optional heat: chili crisp or chili oil
- For serving: sesame seeds, cilantro, extra scallions, lime wedges
Instructions
- 1. Heat oil in a large pot and sauté green onion whites for 30 seconds
- 2. Add garlic and ginger and cook briefly until fragrant
- 3. Pour in broth and stir in soy sauce, rice vinegar, and white pepper (if using); bring to a gentle simmer
- 4. Add mushrooms and carrots and simmer until carrots start to soften
- 5. Add frozen potstickers and simmer gently until heated through and floating
- 6. Stir in bok choy (or spinach) and cook just until wilted
- 7. Turn off heat and stir in toasted sesame oil
- 8. Taste and adjust with more vinegar or soy sauce as needed
