- 3 ripe bananas, mashed
- 1/3 cup melted unsalted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar (brown or white)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- Optional: 1/2 cup walnuts or pecans, chopped
- Optional: 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas in a mixing bowl until smooth.
- Stir the melted butter into the mashed bananas until well combined.
- Mix in the baking soda and salt.
- Add the sugar and stir until evenly incorporated.
- Incorporate the beaten egg and vanilla extract, mixing until just combined.
- Gently fold in the flour until it disappears, being careful not to overmix.
- If desired, fold in walnuts or chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 60-65 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For best flavor and sweetness, use overripe bananas. Wrap banana bread tightly to keep it fresh or freeze it for longer storage.
