- 2 cups Kodiak pancake mix (or your favorite protein pancake mix)
- 1 lb ground sausage, browned and crumbled
- 2 cups milk (Fairlife is great for added protein)
- 2 eggs
- ¼ cup maple syrup
- 1 cup shredded cheese (cheddar or Colby jack)
Instructions
- Preheat your oven to 400°F (200°C) and spray a mini muffin tin generously with non-stick spray.
- In a large mixing bowl, whisk together the pancake mix, milk, eggs, and maple syrup until you achieve a smooth batter.
- Gently fold in the browned sausage and the shredded cheese until evenly distributed.
- Fill each muffin cup about three-quarters full with the batter.
- Bake for approximately 15 minutes, or until they turn golden brown and feel firm.
- Once done, cool them for a few minutes before serving or storing.
Notes
Don’t overmix the batter; a few lumps are fine. Use a cookie scoop to help portion the batter evenly.
