Ingredients

  • 4 oz cream cheese, softened
  • 5 oz fresh spinach, chopped or whole
  • 1 cup cheddar cheese, freshly shredded
  • 1 egg
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Black pepper, to taste
  • Optional: ½ cup diced red bell peppers
  • Optional: ¼ cup plain Greek yogurt
  • Optional: Substitute mozzarella cheese for cheddar

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. Cook the ground turkey in a skillet over medium heat for about 6-8 minutes, breaking apart the meat until browned.
  3. Season the turkey with garlic powder, salt, and pepper, cooking for another minute, then add the spinach and let it wilt for around 2-3 minutes.
  4. Mix in the cream cheese until melted and combined. Allow to cool for about 5 minutes.
  5. Beat an egg in a separate bowl and stir it into the turkey mix along with ½ cup of cheddar cheese.
  6. Transfer everything into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
  7. Bake uncovered for 20-25 minutes, or until the cheese is golden and bubbly.
  8. Let the casserole sit for about 10 minutes before slicing and serving.
