- 1 lb ground turkey (lean)
- 4 oz cream cheese, softened
- 5 oz fresh spinach, chopped or whole
- 1 cup cheddar cheese, freshly shredded
- 1 egg
- ½ tsp garlic powder
- ¼ tsp salt
- Black pepper, to taste
- Optional: ½ cup diced red bell peppers
- Optional: ¼ cup plain Greek yogurt
- Optional: Substitute mozzarella cheese for cheddar
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
- Cook the ground turkey in a skillet over medium heat for about 6-8 minutes, breaking apart the meat until browned.
- Season the turkey with garlic powder, salt, and pepper, cooking for another minute, then add the spinach and let it wilt for around 2-3 minutes.
- Mix in the cream cheese until melted and combined. Allow to cool for about 5 minutes.
- Beat an egg in a separate bowl and stir it into the turkey mix along with ½ cup of cheddar cheese.
- Transfer everything into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
- Bake uncovered for 20-25 minutes, or until the cheese is golden and bubbly.
- Let the casserole sit for about 10 minutes before slicing and serving.
