Ingredients

- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 2 wedges Laughing Cow cheese
- 1 tablespoon ranch seasoning
- Shredded cheese (optional)
- Cooking spray or olive oil (for the pan)
Instructions
- In a mixing bowl, blend the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until everything is well integrated.
- Heat a non-stick skillet over medium heat. Lightly grease the pan with cooking spray or olive oil.
- Place your low-carb tortilla in the skillet and spread the chicken mixture over one half of the tortilla.
- If you’re using shredded cheese, sprinkle it on top of the filling.
- Fold the tortilla over and cook for about 2-3 minutes on each side, or until it’s golden brown and crispy.
- Remove from heat, slice, and serve right away.
Notes
Store leftovers in an airtight container for 3-4 days. Reheat in a skillet for best results.
