Ingredients

  • 1/2 cup cooked chicken, shredded

  • 2 wedges Laughing Cow cheese
  • 1 tablespoon ranch seasoning
  • Shredded cheese (optional)
  • Cooking spray or olive oil (for the pan)

Instructions

  1. In a mixing bowl, blend the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until everything is well integrated.
  2. Heat a non-stick skillet over medium heat. Lightly grease the pan with cooking spray or olive oil.
  3. Place your low-carb tortilla in the skillet and spread the chicken mixture over one half of the tortilla.
  4. If you’re using shredded cheese, sprinkle it on top of the filling.
  5. Fold the tortilla over and cook for about 2-3 minutes on each side, or until it’s golden brown and crispy.
