  • 3 tbsp honey
  • Zest and juice of 2 limes (about 3–4 tbsp juice total)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (or avocado oil)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp extra lime juice (for salsa)
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. In a bowl, whisk together honey, lime zest and juice, minced garlic, olive oil, salt, and pepper until smooth to make the marinade.
  2. Marinate the chicken in a shallow dish or zip-top bag with the marinade for at least 30 minutes, up to 2 hours in the fridge.
  3. Heat a skillet over medium-high heat or preheat the grill. Sear the chicken for 4–6 minutes per side until a golden crust forms and internal temperature reaches 165°F (74°C).
  4. Transfer chicken to a plate and let it rest for 5 minutes.
  5. While the chicken rests, combine diced mango, red onion, 1 tbsp lime juice, and chopped cilantro to make the salsa.
  6. Spoon the mango salsa over the warm chicken and serve immediately.

Notes

For a lower-sugar glaze, reduce honey to 2 tbsp and add a splash of orange juice. You can substitute chicken breasts for thighs for juicier meat.
