A bright and flavorful dish that pairs citrus-glazed chicken with fresh mango salsa, perfect for weeknight dinners and summer entertaining.

- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 3 tbsp honey
- Zest and juice of 2 limes (about 3–4 tbsp juice total)
- 2 cloves garlic, minced
- 2 tbsp olive oil (or avocado oil)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp extra lime juice (for salsa)
- 2 tbsp fresh cilantro, chopped
Instructions
- In a bowl, whisk together honey, lime zest and juice, minced garlic, olive oil, salt, and pepper until smooth to make the marinade.
- Marinate the chicken in a shallow dish or zip-top bag with the marinade for at least 30 minutes, up to 2 hours in the fridge.
- Heat a skillet over medium-high heat or preheat the grill. Sear the chicken for 4–6 minutes per side until a golden crust forms and internal temperature reaches 165°F (74°C).
- Transfer chicken to a plate and let it rest for 5 minutes.
- While the chicken rests, combine diced mango, red onion, 1 tbsp lime juice, and chopped cilantro to make the salsa.
- Spoon the mango salsa over the warm chicken and serve immediately.
Notes
For a lower-sugar glaze, reduce honey to 2 tbsp and add a splash of orange juice. You can substitute chicken breasts for thighs for juicier meat.
