Quick and flavorful Greek chicken tenders marinated in a yogurt-based blend, perfect for weeknight dinners or lunches.

- 1.5 lbs chicken tenders (or sliced chicken breast)
- 1/2 cup plain Greek yogurt (use full-fat for best texture)
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 3 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1/2 teaspoon ground cumin
Instructions
- Whisk together yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper until smooth.
- Add chicken tenders to the bowl, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
- Preheat a grill pan over medium heat or an oven to 400°F (200°C). Discard any leftover marinade.
- If grilling, oil the surface lightly. Place tenders spaced apart so they sear, about 5–7 minutes per side, until an instant-read thermometer reads 165°F (74°C).
- If baking, arrange tenders on a parchment-lined tray and roast for 20–25 minutes, flipping once halfway.
- Transfer cooked tenders to a plate and let rest 3–5 minutes. Garnish with chopped parsley or dill and extra lemon wedges.
Notes
If using chicken breasts, slice into 1-inch strips. Swap yogurt for dairy-free in a pinch. Optional cumin adds warmth; leave out for a purer Greek flavor.
