  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1/2 teaspoon ground cumin

Instructions

  1. Whisk together yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper until smooth.
  2. Add chicken tenders to the bowl, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat a grill pan over medium heat or an oven to 400°F (200°C). Discard any leftover marinade.
  4. If grilling, oil the surface lightly. Place tenders spaced apart so they sear, about 5–7 minutes per side, until an instant-read thermometer reads 165°F (74°C).
  5. If baking, arrange tenders on a parchment-lined tray and roast for 20–25 minutes, flipping once halfway.
  6. Transfer cooked tenders to a plate and let rest 3–5 minutes. Garnish with chopped parsley or dill and extra lemon wedges.

Notes

If using chicken breasts, slice into 1-inch strips. Swap yogurt for dairy-free in a pinch. Optional cumin adds warmth; leave out for a purer Greek flavor.
