  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil, divided
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the halved potatoes. Season with salt, pepper, and paprika. Cook until golden and fork-tender, about 12–15 minutes. Remove and set aside.
  2. Pat the steak cubes dry and season with salt, pepper, and dried Italian herbs.
  3. In the same pan, add 1 tablespoon olive oil and 2 tablespoons butter. Heat until the butter foams.
  4. Add the steak in a single layer and sear in batches if needed, cooking for 2–3 minutes per side until browned.
  5. Reduce heat to medium-low. Push steak aside, add remaining butter and minced garlic, and sauté for 30-60 seconds until fragrant.
  6. Return potatoes to skillet, toss with steak and garlic butter, and cook for 1–2 minutes to heat through.
  7. Taste and adjust seasoning, then sprinkle with chopped parsley and serve immediately.

Notes

For a spicier twist, add crushed red pepper. For a vegetarian version, swap steak for mushrooms and tofu.
