- 4 chicken thighs (bone-in, skin-on, each about 5–6 oz)
- 4 medium potatoes, diced (Yukon Gold or red potatoes)
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss diced potatoes with 2 tablespoons olive oil, minced garlic, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper until evenly coated.
- In a separate bowl, rub chicken thighs with the remaining tablespoon of olive oil and season with salt and pepper.
- Arrange chicken thighs skin-side up in a large oven-safe skillet or baking dish, tucking the seasoned potatoes around them.
- Sprinkle grated Parmesan evenly over chicken and potatoes.
- Bake for 30–35 minutes, or until chicken reaches 165°F (74°C) and potatoes are fork-tender. Broil for 1–2 minutes for extra browning if desired.
- Let dish rest for 5 minutes, garnish with parsley, and serve.
Notes
For a crispier skin, sear chicken thighs skin-side down for 3–4 minutes before baking. You can use boneless thighs but adjust baking time accordingly.
