A simple and delicious one-pan dinner featuring tender chicken and crispy potatoes infused with garlic and Parmesan.

- 4 boneless skinless chicken breasts (or thighs)
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper or lightly greasing it.
- Pat the chicken breasts dry with paper towels. In a small bowl, mix the Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken with olive oil and coat it evenly with the seasoning mixture.
- In a large bowl, toss the halved baby potatoes with 3 tablespoons of olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper until well combined.
- Place the seasoned chicken breasts on one side of the baking sheet. Spread the coated potatoes on the other side.
- Roast in the preheated oven for 25 to 30 minutes, flipping the potatoes halfway. Check that the chicken has reached an internal temperature of 165°F (74°C).
- In the final 5 minutes, sprinkle additional Parmesan over the chicken and potatoes. Switch to broil until the cheese is golden and crispy.
- Remove from the oven and sprinkle chopped fresh parsley over the dish before serving hot.
Notes
Consider adding lemon juice or red pepper flakes for extra flavor. You can also marinate the chicken for a few hours beforehand.
