Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish or line with parchment.
  2. Heat a tablespoon of oil in a skillet over medium and sauté the diced onion until soft and translucent, about 4–5 minutes.
  3. In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan.
  4. Mix gently until evenly distributed, avoiding overmixing.
  5. Shape the mixture into a loaf and place it in the greased baking dish. Pat the top smooth.
  6. Sprinkle remaining Parmesan over the top.
  7. Bake for 45–50 minutes, or until a meat thermometer reads 165°F (74°C). Tent with foil if it browns too fast.
  8. Let the meatloaf rest for 10 minutes before slicing.

Notes

For gluten-free, use gluten-free breadcrumbs. For dairy-free, substitute Parmesan with nutritional yeast.
