- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 onion, cut into wedges
- 2 cups broccoli florets
- 1 cup snap peas, trimmed
- 1 cup raw cashews
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes (optional)
- Sesame seeds, for garnish
- Chopped green onions, for garnish
- Cooked rice or quinoa, for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment.
- Whisk the sauce: In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, cornstarch, minced garlic, grated ginger, and red pepper flakes. Whisk until smooth.
- Toss the chicken cubes, bell peppers, onion wedges, broccoli florets, and snap peas with the sauce in a large bowl until evenly coated.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet. Scatter the cashews over the top.
- Roast for 20–25 minutes, flipping halfway through for even browning, until chicken reaches 165°F (74°C).
- Remove from the oven and sprinkle with sesame seeds and green onions. Serve immediately over rice or quinoa.
Notes
For a thicker sauce, simmer pan drippings briefly before serving. For lower-carb meals, serve over cauliflower rice or wilted greens.
