Description
A simple yet delicious chicken recipe that is tender and comforting, perfect for busy weeknights.
Ingredients
Scale
- 4 boneless, skinless chicken breasts, pounded thin
- 1 cup 2% buttermilk
- ½ tsp salt and freshly cracked black pepper to taste
- ¾ cup full-fat Greek yogurt (or mayonnaise if preferred)
- 1 cup Parmesan cheese, divided
- 1 tbsp dry minced onion
- 1 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Marinate the chicken: Place the chicken in a large bowl or zipper bag and pour the buttermilk over it. Ensure all pieces are submerged. Refrigerate for 30 minutes or overnight.
- Preheat the oven: Set your oven to 350°F (175°C).
- Prepare the chicken: Remove the chicken from the buttermilk and shake off the excess. Place it in a 9×13-inch baking dish and season with salt and pepper.
- Make the yogurt mixture: In a small bowl, mix Greek yogurt (or mayonnaise), ½ cup of Parmesan cheese, dry minced onion, garlic powder, and dried parsley.
- Spread the mixture: Spread the yogurt mixture over the chicken breasts and sprinkle the remaining ½ cup of Parmesan on top.
- Bake the chicken: Bake for about 40 minutes until the chicken is golden brown.
Notes
Pounding the chicken helps it cook evenly and stay tender. Marinate overnight for more flavor.
