Description

A quick and flavorful Easy Chicken Stir Fry packed with vibrant veggies and tender chicken, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound chicken breast, sliced thinly
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat a large skillet or wok over medium-high heat and add the vegetable oil.
  2. Once the oil is hot, toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the pan, cooking for 5-7 minutes or until the chicken is no longer pink.
  4. Now, it’s time to add in the mixed vegetables. Stir-fry them with the chicken for another 3-5 minutes, allowing them to stay tender-crisp.
  5. Drizzle in the soy sauce and give everything a good stir. Season with salt and pepper to taste.
  6. Serve the stir fry hot over cooked rice or noodles.

Notes

For a gluten-free option, substitute soy sauce with tamari.
