- 1 pound chicken breast, sliced thinly
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat a large skillet or wok over medium-high heat and add the vegetable oil.
- Once the oil is hot, toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the sliced chicken breast to the pan, cooking for 5-7 minutes or until the chicken is no longer pink.
- Now, it’s time to add in the mixed vegetables. Stir-fry them with the chicken for another 3-5 minutes, allowing them to stay tender-crisp.
- Drizzle in the soy sauce and give everything a good stir. Season with salt and pepper to taste.
- Serve the stir fry hot over cooked rice or noodles.
Notes
For a gluten-free option, substitute soy sauce with tamari.
