Instructions

  2. Cut potatoes into even 1–1 1/2 inch chunks. Rinse in cold water for 30 seconds, drain, and pat very dry (or parboil 5–7 minutes, drain, shake to rough edges, and steam-dry).
  3. Toss potatoes with oil, salt, pepper, garlic powder, paprika, and rosemary.
  4. Carefully remove hot sheet pan. Spread potatoes in a single layer with space between pieces.
  5. Roast 20 minutes without disturbing to develop a crust.
  6. Flip potatoes and roast 15–25 minutes more until deeply golden and crisp.
  7. Taste and season with an extra pinch of salt if needed. Finish with parsley/parmesan/lemon and serve hot.
