  • 2 large eggs, beaten
  • ¾ cup all-purpose flour
  • Honey mustard sauce (store-bought or homemade)
  • Salt and pepper
  • Oil for frying (vegetable, canola, or light olive oil)

Instructions

  1. Preheat the oven to 375°F (190°C) if you plan to finish the dish in the oven.
  2. Place each chicken breast between two sheets of plastic wrap. Pound gently with a meat mallet or rolling pin until an even ½-inch thickness. Season both sides with salt and pepper.
  3. Set up three shallow dishes: flour in the first, beaten eggs in the second, and breadcrumbs in the third. Dredge each breast first in flour, shaking off excess.
  4. Dip the floured breast in the beaten eggs, then press into breadcrumbs to coat fully. Shake off loose crumbs.
  5. For frying: heat about 2–3 tablespoons oil in a large skillet over medium heat. Add the breaded breasts and cook 3–4 minutes per side, until golden brown. For baking: place breaded breasts on a parchment-lined baking sheet and bake 25–30 minutes, flipping once, until golden and almost cooked through.
  6. Transfer the chicken to a baking sheet (if frying) or keep on the pan; top each breast with a slice of ham and cheese. Return to the oven for 5–7 minutes, or until the cheese is melted and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and rest 3–5 minutes. Drizzle with honey mustard sauce before serving.

Notes

Consider using Panko breadcrumbs for extra crunch. If you’re looking for a lower-carb option, swap breadcrumbs for crushed pork rinds or almond flour.
