- 1 tablespoon fresh parsley, chopped (optional)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
- Sprinkle the crumbled feta cheese evenly in the skillet, covering the bottom.
- Cook the feta for about 1-2 minutes until it starts to melt slightly and the edges begin to crisp.
- Carefully crack the eggs over the feta, spacing them out.
- Season the eggs with salt and black pepper to taste.
- Let cook for about 3-4 minutes, until the egg whites are set and yolks are runny.
- If desired, sprinkle with parsley and red pepper flakes for additional flavor.
- Gently slide the eggs and crispy feta onto a plate and serve immediately.
Notes
This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on low heat.
