- 2 tbsp butter
- 2 lbs chicken, cut into thin strips
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 white onion, diced
- 2 tbsp garlic, diced
- ½ cup chicken stock
- ½ cup roasted red pepper, drained and sliced
- 1 cup heavy cream
- ½ cup parmesan cheese, shredded
- 1 tbsp Italian seasoning
- ½ cup pepperoncini peppers, drained and sliced
Instructions
- Prep the chicken by patting it dry and seasoning with salt and pepper.
- Brown the chicken in a large skillet with melted butter over medium-high heat for 4-5 minutes per side until golden brown. Remove and set aside.
- Sauté the diced onions in the same skillet until translucent, about 3-4 minutes, then add the garlic for another minute.
- Create the sauce by pouring in the chicken stock and scraping up any brown bits from the pan.
- Add the cream and parmesan cheese, stirring until the sauce thickens slightly.
- Finish with the chicken, roasted peppers, Italian seasoning, and pepperoncini, cooking for another 3-5 minutes until heated through.
- Serve in the skillet, garnished with extra parmesan if desired.
Notes
For dairy-free options, substitute heavy cream with coconut cream. Consider using vegetable broth and plant-based chicken for a vegetarian version.
