  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained and sliced

Instructions

  1. Prep the chicken by patting it dry and seasoning with salt and pepper.
  2. Brown the chicken in a large skillet with melted butter over medium-high heat for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Sauté the diced onions in the same skillet until translucent, about 3-4 minutes, then add the garlic for another minute.
  4. Create the sauce by pouring in the chicken stock and scraping up any brown bits from the pan.
  5. Add the cream and parmesan cheese, stirring until the sauce thickens slightly.
  6. Finish with the chicken, roasted peppers, Italian seasoning, and pepperoncini, cooking for another 3-5 minutes until heated through.
  7. Serve in the skillet, garnished with extra parmesan if desired.
