- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 packs of ramen noodles
- 2 tbsp minced garlic
- 1 cup heavy cream
- 1 cup mixed fresh vegetables (like bell peppers, carrots, or broccoli)
- 2 tbsp soy sauce
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large pot, bring the chicken broth to a boil. Once boiling, add the ramen noodles and cook according to the package instructions.
- While the noodles are cooking, heat a little oil in a separate pan over medium heat. Add the minced garlic and sauté until fragrant (around 1-2 minutes).
- Add the chicken breasts to the pan and cook until browned and fully cooked through. Remove the chicken and slice into tender pieces.
- In the same pan, add the mixed vegetables and sauté until tender (about 3-5 minutes).
- Pour in the heavy cream and soy sauce, stirring to combine. Season with salt and pepper to taste.
- Return the sliced chicken to the pan to heat through for a couple of minutes.
- Serve the ramen in bowls, topping with the creamy sauce and sautéed vegetables, garnished with green onions.
Notes
For a vegetarian option, substitute chicken with tofu or a plant-based protein. Store leftovers in an airtight container in the fridge for up to three days.
