- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- 12 oz penne, fettuccine, or spaghetti
- Salt, for the pasta water
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 cup heavy cream
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (optional)
- Red pepper flakes (optional)
- Fresh lemon juice (optional)
- Sautéed vegetables or shrimp (optional)
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 6-7 minutes per side, or until fully cooked. Remove and let rest before slicing.
- In a large pot, bring salted water to a boil and cook your pasta according to the package instructions. Reserve a cup of pasta water, then drain and set aside.
- In the same skillet you used for the chicken, melt butter. Add minced garlic, remaining Cajun seasoning, and smoked paprika. Sauté for a minute until fragrant, then pour in the heavy cream and chicken broth. Let it simmer for a few minutes until slightly thickened. Stir in Parmesan cheese until melted.
- Add the pasta to the sauce, tossing to coat evenly. Include the sliced chicken and mix well. If the sauce is too thick, add some reserved pasta water at a time until you reach your desired consistency.
Notes
Serve with a sprinkle of fresh parsley and red pepper flakes for added flavor. Store leftovers in an airtight container, refrigerating for up to three days or freezing for up to three months.
