Description

A quick and easy dish that combines the bold flavors of Cajun spices with creamy pasta, perfect for busy weeknights or special occasions.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 12 oz penne, fettuccine, or spaghetti
  • Salt, for the pasta water
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Fresh lemon juice (optional)
  • Sautéed vegetables or shrimp (optional)

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 6-7 minutes per side, or until fully cooked. Remove and let rest before slicing.
  2. In a large pot, bring salted water to a boil and cook your pasta according to the package instructions. Reserve a cup of pasta water, then drain and set aside.
  3. In the same skillet you used for the chicken, melt butter. Add minced garlic, remaining Cajun seasoning, and smoked paprika. Sauté for a minute until fragrant, then pour in the heavy cream and chicken broth. Let it simmer for a few minutes until slightly thickened. Stir in Parmesan cheese until melted.
  4. Add the pasta to the sauce, tossing to coat evenly. Include the sliced chicken and mix well. If the sauce is too thick, add some reserved pasta water at a time until you reach your desired consistency.

Notes

Serve with a sprinkle of fresh parsley and red pepper flakes for added flavor. Store leftovers in an airtight container, refrigerating for up to three days or freezing for up to three months.
