  • 4 ounces brick-style cream cheese (softened)
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by spraying it with floured cooking spray or greasing and flouring it.
  2. In a large bowl, whisk together the egg, both sugars, coconut oil, sour cream, and vanilla until well combined.
  3. Stir in the mashed bananas until everything is smoothly mixed.
  4. Add the flour, baking powder, baking soda, and optional salt, gently folding with a spatula until just combined.
  5. Pour about two-thirds of the batter into the prepared loaf pan and smooth the top.
