Description
A comforting and easy cowboy casserole featuring seasoned ground beef, creamy soup, corn, and crispy tater tots, perfect for busy weeknights.
Ingredients
Scale
- 1 lb Ground Beef
- 1 can Cream of Mushroom Soup
- 0.5 cup Milk
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt, to taste
- Pepper, to taste
- 1 cup Frozen Corn
- 2 cups Shredded Cheese
- 1 bag Frozen Tater Tots
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- Brown the beef in a large skillet over medium-high heat until no pink remains; drain excess fat if desired.
- Reduce heat to medium and stir in soup, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth and heated through.
- Add the corn and 1 cup of shredded cheese to the mixture, heating until combined.
- Spread the meat mixture evenly into the prepared dish and sprinkle the remaining cheese on top.
- Arrange the tater tots in a single layer across the cheese.
- Bake for 25–35 minutes, or until the tots are golden and the casserole is bubbling. Broil for an extra crisp if desired.
- Let the casserole rest for 5–10 minutes before serving.
Notes
For a lighter crust, swap half the tater tots for thinly sliced potatoes or sweet potatoes, or try a breadcrumb topping.
