- 2 teaspoons chili powder, divided
- 1 teaspoon ground cumin, divided
- 1½ teaspoons kosher salt, divided
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder

- 4 boneless, skinless chicken breasts (1½–2 pounds)
- ½ onion, chopped
- 2 cloves garlic, minced
- 15 ounces canned black beans, drained (1 can)
- 15 ounces canned corn, drained (1 can)
- 15 ounces canned fire-roasted diced tomatoes (1 can)
- 3 tablespoons olive oil, divided
- 2 tablespoons lime juice (from 1 lime)
- 1 cup shredded Mexican blend cheese
- ½ cup chopped fresh cilantro
- 3 cups cooked white rice (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the spice mix by mixing 1 teaspoon chili powder, ½ teaspoon ground cumin, 1 teaspoon kosher salt, smoked paprika, onion powder, ground black pepper, and garlic powder in a small bowl. Set aside.
- Season the chicken by drizzling 1 tablespoon of olive oil over the breasts and coat them well with the spice mix.
- Sear the chicken in a hot skillet with 1 tablespoon of olive oil for about 3 to 4 minutes on each side until browned. Remove and set aside.
- Cook the onions and garlic in the same skillet with another tablespoon of olive oil, cook for 2 to 3 minutes, then add minced garlic and sauté for another 30 seconds.
- Combine the black beans, corn, fire-roasted diced tomatoes, remaining 1 teaspoon chili powder, ½ teaspoon ground cumin, and lime juice, mix well.
- Nestle the chicken back into the skillet, placing it in the vegetable mixture and sprinkle shredded cheese on top.
- Bake for 10 to 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted.
- Serve hot over a bed of cooked white rice, garnished with fresh cilantro.
