  • 4 boneless, skinless chicken breasts (2 pounds)
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 15 ounces canned black beans, drained (1 can)
  • 15 ounces canned corn, drained (1 can)
  • 15 ounces canned fire-roasted diced tomatoes (1 can)
  • 3 tablespoons olive oil, divided
  • 2 tablespoons lime juice (from 1 lime)
  • 1 cup shredded Mexican blend cheese
  • ½ cup chopped fresh cilantro
  • 3 cups cooked white rice (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the spice mix by mixing 1 teaspoon chili powder, ½ teaspoon ground cumin, 1 teaspoon kosher salt, smoked paprika, onion powder, ground black pepper, and garlic powder in a small bowl. Set aside.
  3. Season the chicken by drizzling 1 tablespoon of olive oil over the breasts and coat them well with the spice mix.
  4. Sear the chicken in a hot skillet with 1 tablespoon of olive oil for about 3 to 4 minutes on each side until browned. Remove and set aside.
  5. Cook the onions and garlic in the same skillet with another tablespoon of olive oil, cook for 2 to 3 minutes, then add minced garlic and sauté for another 30 seconds.
  6. Combine the black beans, corn, fire-roasted diced tomatoes, remaining 1 teaspoon chili powder, ½ teaspoon ground cumin, and lime juice, mix well.
  7. Nestle the chicken back into the skillet, placing it in the vegetable mixture and sprinkle shredded cheese on top.
  8. Bake for 10 to 15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted.
  9. Serve hot over a bed of cooked white rice, garnished with fresh cilantro.
