Description

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 can (15 oz) sweet corn, drained (or 1 1/2 cups frozen corn, thawed)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 bag (32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium. Add the ground beef and cook, breaking it up until no pink remains (about 6–8 minutes). Drain excess fat.
  3. Reduce heat to low. Stir in the corn and soup until evenly combined. Season with salt, pepper, and optional spices.
  4. Spread the beef mixture in an even layer in the prepared baking dish.
  5. Arrange the tater tots in a single layer over the beef mixture.
  6. Sprinkle the cheddar evenly over the tater tots.
  7. Bake for 25–30 minutes until the tater tots are golden brown and the cheese is melted. Broil for 1–2 minutes for extra browning if desired.
  8. Let rest for 5 minutes before serving.

Notes

Refrigerate leftovers for up to 3–4 days. For freezing, cool completely and wrap tightly; can be frozen for up to 2 months.
