Ingredients
Scale
- 12 oz linguine pasta
- 1 lb boneless, skinless chicken breast, diced
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 6 cloves garlic, minced
- 1 tbsp paprika
- 1 tsp cayenne pepper (Adjust for desired spice level.)
- 1 tsp salt
- ½ tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (For garnish.)
- Juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil and 2 tablespoons of butter in a spacious skillet over medium heat. Add the diced chicken and season it with paprika, cayenne pepper, salt, and black pepper. Cook for about 5-7 minutes until golden brown.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Lower the heat and add the remaining 2 tablespoons of butter. Once melted, toss in the cherry tomatoes and cook until softened, about 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and combined.
- Finish with lemon juice for brightness.
- Toss the cooked linguine into the skillet, ensuring every strand is coated with the rich sauce and chicken.
- Plate your linguine, garnish with chopped parsley, and serve hot.
