- 1 ½ pounds boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- Lemon wedges, for serving
- Optional: ½ teaspoon cayenne pepper for extra heat
Instructions
- Pat the chicken breasts dry using paper towels. Season both sides generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Place the chicken in the pan, cooking for 3 to 4 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- Lower the heat to medium and add the unsalted butter to the same skillet. Once it’s melted, toss in the minced garlic, sautéing for about 30 seconds until fragrant.
- Stir in the Dijon mustard, fresh lemon juice, lemon zest, red pepper flakes, and smoked paprika. Mix well to create a flavorful sauce.
- Return the chicken to the skillet, tossing to coat it well in the buttery sauce. Allow it to simmer for an additional 1 to 2 minutes so the flavors meld.
- Serve the Cowboy Butter Chicken Bites hot, garnished with fresh parsley and lemon wedges on the side.
Notes
For extra heat, add diced jalapeños or increase cayenne pepper. Pair these bites with rice, mashed potatoes, or serve in tacos.
