Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium-high heat.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Add olive oil to the skillet, then carefully place the seasoned chicken breasts into the skillet.
  4. Sear the chicken for about 5-7 minutes on each side, or until it’s golden brown and the internal temperature reaches 165°F (75°C).
  5. Mix the softened butter in a bowl with parsley, chives, garlic powder, onion powder, and a pinch of salt and pepper until well combined.
  6. Once the chicken is perfectly cooked, lower the heat and add the herb butter to the skillet.
  7. Allow the butter to melt over the chicken for a few minutes, letting all those fantastic flavors meld together.
  8. Serve the chicken warm, generously topped with the melted cowboy butter.
