- 4 chicken breasts
- 2 tablespoons olive oil
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium-high heat.
- Season the chicken breasts generously with salt and pepper on both sides.
- Add olive oil to the skillet, then carefully place the seasoned chicken breasts into the skillet.
- Sear the chicken for about 5-7 minutes on each side, or until it’s golden brown and the internal temperature reaches 165°F (75°C).
- Mix the softened butter in a bowl with parsley, chives, garlic powder, onion powder, and a pinch of salt and pepper until well combined.
- Once the chicken is perfectly cooked, lower the heat and add the herb butter to the skillet.
- Allow the butter to melt over the chicken for a few minutes, letting all those fantastic flavors meld together.
- Serve the chicken warm, generously topped with the melted cowboy butter.
Notes
Serve with rice, roasted vegetables, or a fresh salad. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
