- 4 boneless, skinless chicken breasts
- 1 cup grated Romano cheese
- ½ cup all-purpose flour
- 2 large eggs
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare your breading station with flour, beaten eggs mixed with lemon juice, and grated Romano cheese.
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip it into the egg mixture, and coat it with Romano cheese.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Cook the breaded chicken for about 4-5 minutes on each side until golden brown.
- Transfer the browned chicken to a baking dish and bake for about 20 minutes or until fully cooked (internal temperature of 165°F).
- Garnish with fresh parsley if desired and serve warm.
Notes
For gluten-free options, substitute all-purpose flour with almond flour or gluten-free flour blend. You can also use Parmesan cheese instead of Romano.
