Description

A comforting and versatile classic chicken salad that can be enjoyed in many ways, perfect for quick lunches or gatherings.

Ingredients

Scale
  • 2 cups Cooked Chicken (Shredded or diced)
  • 1 cup Mayonnaise (or Greek yogurt for a lighter option)
  • 1 cup Diced Celery
  • 1/2 cup Diced Red Onion
  • 1/4 cup Sliced Green Onions
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 4 leaves Lettuce
  • 4 slices Crusty Bread
  • 1 cup Tortilla Chips

Instructions

  1. Start by shredding or dicing your cooked chicken based on your texture preference.
  2. In a large mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper. Stir until smooth.
  3. Add shredded chicken, diced celery, red onion, and green onions to the bowl. Mix gently until well-coated in the dressing.
  4. Taste and adjust seasoning if needed. Add more salt, pepper, or lemon juice as desired.
  5. Cover the bowl and let the chicken salad chill in the fridge for at least 30 minutes.
  6. Serve on a bed of lettuce, as a sandwich on crusty bread, or alongside tortilla chips.

Notes

Store leftovers in an airtight container in the refrigerator and consume within three days for best quality. Avoid freezing mixed chicken salad containing mayonnaise.
