- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the mashed bananas with the melted butter until well blended.
- Stir in the baking soda and a pinch of salt.
- Mix in the sugar followed by the beaten egg and vanilla extract, ensuring everything is combined.
- Gently fold in the flour until just incorporated; it’s okay if there are a few lumps!
- In a separate bowl, mix the ground cinnamon with the brown sugar.
- Pour half of the banana bread batter into the greased loaf pan, then sprinkle half of the cinnamon-sugar mixture on top.
- Add the remaining batter, followed by the last of the cinnamon-sugar mixture.
- Use a knife to gently swirl the cinnamon mixture into the batter.
- Bake for 60-65 minutes, or until a toothpick comes out clean from the center.
- Allow it to cool before slicing and serving.
Notes
Store in an airtight container at room temperature for up to three days or freeze slices for longer storage. Experiment with adding nuts or chocolate chips for extra flavor.
