- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 red onion, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup corn (fresh or canned)
- 1/4 cup black beans (rinsed and drained)
- Olive oil for drizzling
Instructions
- Preheat your grill or skillet over medium-high heat.
- Season the chicken by rubbing it with chipotle chili powder, lime juice, salt, and pepper.
- Cook the chicken for about 6-7 minutes on each side until thoroughly cooked.
- Remove the chicken from the heat and let it rest for 5 minutes.
- Combine salad greens, cherry tomatoes, avocado, red onion, cilantro, corn, and black beans in a large bowl.
- Slice the chicken into strips and place it on top of the salad.
- Drizzle with olive oil and lime juice.
- Toss gently to combine before serving.
