Description

A quick and satisfying dish that brings together tender beef, vibrant broccoli, and a delicious sauce, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb flank steak (or skirt steak)
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (Optional)
  • 1/2 cup chicken or beef stock
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar (or white sugar)
  • 1 head broccoli (cut into bite-size florets)
  • 3 garlic cloves (minced)
  • 2 teaspoons ginger (minced)

Instructions

  1. Prepare the beef: Slice the flank steak against the grain into 0.5 cm (1/4 inch) thick slices or sticks. Place in a bowl and add soy sauce, peanut oil, and cornstarch. Mix by hand to coat the beef evenly and let it marinate for 10 minutes.
  2. Make the sauce: In a medium bowl, combine all the sauce ingredients—chicken stock, Shaoxing wine, soy sauces, sugar, and cornstarch. Stir until fully blended.
  3. Steam the broccoli: In a large nonstick skillet, add 1/4 cup water over medium-high heat. Once boiling, add the broccoli and cover. Steam for about 1 minute until tender, then transfer to a plate and wipe out any excess water from the skillet.
  4. Cook the beef: Heat the skillet on medium-high with a tablespoon of oil. Spread the marinated beef in one layer. Cook without stirring for about 30 seconds until browned, then flip and cook for a few more seconds until lightly charred.
  5. Add aromatics and combine: Stir in minced garlic and ginger, cooking until fragrant. Return the broccoli to the skillet, pour in the prepared sauce, and stir continuously until the sauce thickens—about 1 minute.
  6. Serve immediately: Transfer everything to a plate and enjoy while hot!

Notes

For best results, marinate the beef for longer if possible. Consider adding sliced bell peppers or snap peas for extra crunch.
