- 1 cup cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup bell pepper, diced
- 1 cup green onions, sliced
- 1 cup cheese (cheddar or Monterey Jack), shredded
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package egg roll wrappers
- Oil for frying
- Sour cream and salsa for serving
Instructions
- Combine shredded chicken, black beans, corn, bell pepper, green onions, cheese, cumin, and chili powder in a large mixing bowl.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place a heaping tablespoon of filling in the center.
- Fold the bottom corner up over the filling, then fold in the sides and roll tightly upwards. Seal with a little water.
- Heat oil in a deep skillet over medium heat until sufficient for immersion. Fry eggrolls in batches for about 3–4 minutes on each side until golden brown.
- Remove cooked eggrolls and drain on paper towels. Serve hot with sour cream and salsa.
Notes
For a vegetarian option, substitute the chicken with shredded beef or tempeh. Get creative with additional veggies like zucchini or carrots.
