Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup bell pepper, diced
  • 1 cup green onions, sliced
  • 1 cup cheese (cheddar or Monterey Jack), shredded
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • Oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Combine shredded chicken, black beans, corn, bell pepper, green onions, cheese, cumin, and chili powder in a large mixing bowl.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place a heaping tablespoon of filling in the center.
  3. Fold the bottom corner up over the filling, then fold in the sides and roll tightly upwards. Seal with a little water.
  4. Heat oil in a deep skillet over medium heat until sufficient for immersion. Fry eggrolls in batches for about 3–4 minutes on each side until golden brown.
  5. Remove cooked eggrolls and drain on paper towels. Serve hot with sour cream and salsa.

Notes

For a vegetarian option, substitute the chicken with shredded beef or tempeh. Get creative with additional veggies like zucchini or carrots.
