Instructions

  1. Prep the veg: Chop the cucumber, halve the cherry tomatoes, and finely dice the red onion. Chop the parsley and dill.
  2. Combine the base: In a large mixing bowl, add the chopped cucumber, halved tomatoes, diced red onion, chopped parsley, and chopped dill.
  3. Add chickpeas and feta: Stir the rinsed and drained chickpeas into the bowl. Crumble the feta over the top.
  4. Make the dressing: In a small bowl or a jar with a lid, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, salt, and pepper. Whisk or shake vigorously until emulsified.
